If you get DPC latency spikes these will come through as pops and clicks in your audio stream which will drive you nuts. DPC latency spikes on Apple hardware is basically totally a non-issue. Stability is pretty important depending on your situation, in audio production you can stand to have some crashes while if your doing a performance a crash is the last thing that you want. The advantage of the mac is that when programmers are writing code for the audio application that you are using that there is only a fairly limited amount of hardware that it will be running on, with windows on the other hand there is virtually limitless amounts of hardware that it could be running on. Its alot easier to find and fix bugs when there is only a limited amount of hardware that your users are using. This is the reason why Mac's are loved so much in the professional audio scene when your doing something like live performance, your chances of having conflicts and crashing is a lot less due to the nature of the platform. Your choice of VST's on mac compared to Windows is going to be a bit limiting, but its not that bad unless you have already fell in love with particular plugins from windows until moving to Mac.
This isn't something i would worry much about at all unless you have a handful of audio plugins that you cant live without, but it is certainly a factor. There is a good reason why there are more plugins one PC than there is on Mac; there are more users producing music on PC than there is on Mac. I could easily bring my late 2011 mac book 17' with an i7 in it to its knees, but my workflow is highly CPU intensive; a lot of soft synths and extremely heavy use of audio effects.
This is one of the big reasons i recently built myself a PC desktop computer with 5930k processor; i am more than happy to produce on a PC. Yet at the same time i have more confidence live performing on a Mac. My recommendation is to just stick with what you already have and get producing on the PC gear you have which is probably more than adequate given your a building enthusiast. I am actually in college right now so I don't have access to my desktop since I didn't want to waste money shipping it to my dorm and possibly damaging it in the process. As a result, I have to get a laptop since a custom PC is off the table (I need to bring my computer to classes). Would you recommend something like the new Dell XPS 15 that was just announced, or do you think a Macbook is worth the stability?

But its basically as easy as looking at a laptop you want to produce with, finding the exact model number and googling it followed by DPC latency to see if anyone is getting any DPC latency spikes.
I certainly would not buy anything until someone else has had their chance to get their hands on it and tested it for audio production. There really is no right and wrong answer to your question so i am hesitant to tell you to go either way. PC has a lot going for it considering that you can game on it, they are less likely to thermal throttle and there is more software for it. The biggest thing mac gives you is stability. If you ever want to actually perform with the thing i would recommend mac, otherwise PC is absolutely fine. Everyone is different, i really don't discriminate against anyone's choice of production machine nowadays. Don't feel pressured to use either option, anyone who tells you otherwise really doesnt have a qlue what they are talking about.
Your choice of DAW is also a factor, you wont be able to use Logic if you buy a PC and you wont be able to use FL studio (its coming) if you use a Mac. TLDR: What you want to get out of your laptop will dictate and hardware which OS your going to go with. In the end, it comes down to this: are you willing to spend a few hundred extra on a given application?
For some people the answer is a firm yes: others, no. A mac isn't inherently better at audio editing. However, a lot of people like Logic Pro, which is OS X exclusive. This doesn't mean you can't edit on a Windows machine though. The real consideration here is cost: are you willing to spend the extra money on a Mac? If so, go buy that mac. If not, you have two options: go Windows only or build a Hackintosh, or hacked OS X machine.
Hackintoshs don't have the support and stability that a Mac will, but they're much more inexpensive and if you're a tinker-r could be a great match. Check out if you're into that.
All the other problems are basically nil. Getting used to OS X isn't hard, especially with Parallels and Bootcamp making it possible to run Windows on your Mac almost hassel-free. Unless you have a specific reason to use a mac (such as, your work reimburses you for equipment and software, and will only pay for apple stuff), a PC does just fine.
The entire Adobe suite runs quite well on Windows, as does the Autodesk software. On the Windows media creation front, for music, we have software far more advanced than Audacity.
